Cooking a Pizza- A Few Easy Questions?
cooking my 1 st pizza from scratch. A few questions:
1.) If the sauce tastes a little bitter, too tomato-ey what should I add to it? more spices, water, oil, etc. Or is it suppose to be a little on the tart side like that?
2.) How can I get my crust to come out crispy? I had heard that solely depended on the ingredients and not baking method (stone, baked on rack, brushed with an egg white, etc.) T/F?

a little on the tart side is usually good. bitter usually means something went wrong in the cooking process or the tomatoes were unripe. Use canned tomatoes except in the peak tomato season.
A baking stone does help with the crispness immensly, also try broiling or grilling the pizza, just make sure the oven is as hot as possible; Too much flour in the dough results in a tough crust, also try adding olive oil to the dough during the kneading process, letting it rise until doubled before rolling.
