what can I use instead of roll-on icing?
Yo.
So, for my best friend's birthday I'm going to make him a coffin cake.
It's going to be a pretty elaborate cake (chocolate skulls, edible flowers, that kinda thing), the only problem is the icing.
I love the /look/ of roll-on icing, but too much can be sickening (just thinking about it makes me blehh). I was wondering what I could use instead of roll-on icing? Thanks!
Hi Monster, Often the type of icing you use is determined by the cake you make,a light sponge cake will not take heavy roll on icing very well although it can be done.A fruit cake can take 'heavier' icing such as fondant or royal icing - both of which you can find online. If you are using a poured icing made with icing /confectioners sugar this would take the weight of your decorations but you must allow enough time for it to dry completely or it will crack,although that could add to the effect of the "cofin" type theme. Depending on time,budget and quantity of portions needed,I would go for a rich fruit cake baked in a loaf / bread tin and shaped by hand and covered with royal icing although you may want to colour the icing unless you want a white coffin!. This way you can make your cake well in advance and it will keep. Some wedding cake bases are made a couple of years before needed so they can mature. At a pinch and if you are in a hurry you could use a sponge cake and cover it with chocolate icing and decorate once it is set.
