Why use gluten and lecithin in bread baking?
I am new at bread machines and baking bread. What do these to items do to the bread and can I use something else? I am trying to cook healthier for my family! Thanks for your advice and help.
Gluten is the starch and mineral structure in white flour, all wheat flour has it, now there is non gluten flour out there made from wheat and all others like rice, corn, buckwheat (not a true wheat), chickpea, coconut and other can be used, Lecithin is a soya based protein added to keep breads soft and is a mild preservative, it can be left out, store bought bread has it to maintain shelf life. Home made bread has a short life than commercially made ones, use unbleached flour for the est results, milk to make it soft, and keep it chilled to allow it to stick around a few more days, in a sealed container or bag.
